We used Bob's Red Mill All Purpose flour and polenta to put together this epic sweet and savory DIY waffle bar perfect for Mother's Day!  You can make the waffles ahead and reheat them in the oven when guests arrive and prep all of the toppings ahead so all you have to do is set everything out and let guests get creative!  This post and recipe is sponsored by Bob's Red Mill. For the Savory Waffles

Serves 6-8

Ingredients:

1 3/4 cups Bob’s Red Mill All Purpose flour

1/2 cup Bob’s Red Mill Polenta

1 tsp kosher salt

1/2 tsp baking soda

1/2 tsp baking powder

Freshly ground black pepper, to taste

1 1/2 cups milk

3/4 cup plain greek yogurt

2 large egg whites

4 tbsp butter, melted and cooled slightly

2 cups grated sharp cheddar cheese

2 tbsp snipped chives

Hot sauce, optional

Optional toppings: fried egg, poached egg, avocado, smoked salmon, creme fraiche

Special equipment: Waffle Iron

Directions:

In a large bowl whisk together the flour, polenta, baking soda, baking powder and black pepper. Set aside.

In a separate bowl, combine the the milk, greek yogurt, and egg whites. Whisk until well combined.

Whisk the wet ingredients into the dry ingredients and mix until just combined. Stir in the melted butter, then add the cheese, chives and hot sauce (if using).

Let batter rest while you preheat your waffle iron. Grease waffle iron with butter or nonstick spray and cook batter according to the instructions that came with your machine*.

Top waffles with savory items of choice such as fried eggs, poached eggs, avocado, smoked salmon and/ or creme fraiche. 

*Note: We cooked our waffles for about 4-5 minutes, or until the batter stopped steaming.

For the Sweet Waffles 

Makes about 8 large waffles (more or less depending on your waffle iron)

Ingredients

2 cups Bob's Red Mill all purpose flour 

½ tsp salt

1 tsp cinnamon

½ tsp baking soda

½ tsp baking powder

2 tbsp powdered sugar

1 cup milk

3/4 cup yogurt (plain or greek)

2 egg whites

1 tsp vanilla extract

3 tbsp melted butter

For serving: Mango, Blueberries, Strawberries, Kiwi, Blackberries, Maple Syrup, Jam, Whipped Cream Fresh Citrus, Raspberries


Directions

In a large bowl, whisk together the flour, salt, cinnamon, baking soda, baking powder and powdered sugar. In a separate small bowl, whisk together the milk, yogurt, egg whites and vanilla.


Combine the wet ingredients into the dry, folding until well combined. Fold in melted butter. Let batter rest while you preheat your waffle iron. Grease waffle iron with butter or nonstick spray and cook batter according to the instructions that came with your machine*.
