Chewy Chocolate Dipped Peanut Butter Cookies
Makes: 48 cookies
1 cup butter, softened
1 cup smooth peanut butter
1 1/2 cups brown sugar
1 tsp vanilla
2 1/4 cups flour
1 tsp cornstarch
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 bar of dark or milk chocolate, melted
Pre-heat oven to 350F degrees & line 2 baking sheets with parchment paper.
In a large mixing bowl, using an electric mixer cream together butter and peanut butter until smooth. Add in brown sugar and beat until fluffy. Add egg & vanilla and beat on high, scraping down the bowl once or twice until fluffy.
In a separate bowl, whisk together flour, baking soda, cornstarch, cinnamon and salt. Add to wet ingredients and beat together until combined.
Drop 1 tbsp amounts of dough onto prepared baking sheets - 12 per sheet. I usually just bake one of two trays at a time and place leftover dough in the fridge to bake off fresh over the next few days, but you could always bake them all at once too.
Bake for 8-10 minutes or until the edges are golden.
Remove from oven and allow to cool completely before dipping in chocolate. Once your cookies are cooled, dip one half of the cookie into the melted chocolate and place back on parchment lined baking sheet & allow the chocolate to set - depending on the temperature in your house it will take about 20-30 minutes.
