Mini Kabocha Pies

These are beauty bites and are not only a good source of collagen but also of essential fats, complex carbs, and healthy proteins. "

These tasty little pies are not the decadent treat they are mascarading as. If flavored collagen isn't for you, substitute a splash of dark maple syrup.

Ingredients

4 Tbs Cashews

3 Dates, pitted

2 Tsp cinnamon

A dash of almond extract

 

Method

In a food processor, grind the ingredients to a paste. Form small pies by making a thumbprint in the dough and forming the edges around your thumb. This should make 3-4 pies.

For the filling, purée 1/2 cup of kabocha squash or you can use sweet potato with 3 Tbs of your favorite collagen. I used @superbodybreakthrough caramel latte flavored collagen. After mixing those ingredients, purée in 1 Tbs of @kitehillfoods almond based cream cheese. Full the pies with the mixture. Let them sit for 10-15 minutes in the fridge to firm up and ENJOY!
