  • 2 cups whole milk
  • 1 cup water
  • 1/4 cup coconut cream
  • 1/4 cup sweetened condensed milk
  • 1 cinnamon stick
  • 1 teaspoon vanilla extract
  • 1 1/2 cups RiceSelect® Arborio Rice
  • 2 ripe mangos, sliced `
  • Fresh mint leaves, for garnish

Method

  • Step 1

    In a pot over medium heat, combine the milk, water, coconut cream, condensed milk, cinnamon stick, and vanilla extract. Stir and bring to a gentle simmer.

  • Step 2

    In a separate pan, add the RiceSelect® Arborio Rice. Gradually ladle in the milk mixture, one scoop at a time, stirring frequently. Continue adding the liquid as the rice absorbs it, until the rice is fully cooked and tender. This process should take about 30-40 minutes.

  • Step 3

    Once the rice is tender and creamy, remove it from the heat and let it cool to room temperature.

  • Step 4

    Slice the mangoes and garnish the rice pudding with fresh mint leaves. For extra sweetness, drizzle with additional milk or condensed milk.

  • Step 5

    Serve the mango sticky rice-inspired pudding chilled or at room temperature.
