ingredients

Cocktail:

  • 1 ounce basil and oregano infused gin (below)
  • 1 ounce sweet vermouth
  • 3/4 ounce Campari
  • 1/4 ounce tomato water (below)
  • Freshly grated parmesan cheese
  • Pepperoni, for garnish
  • Fresh mozzarella, for garnishing
  • Tomato, sliced for garnish
  • Fresh oregano, for garnish

Basil and Oregano Infused Gin:

  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh oregano
  • 1 cup gin

Tomato Water:

  • 2 Roma tomatoes
  • Sea salt, to taste

Method

To make the Basil and Oregano Infused Gin:

  • Step 1

    Add fresh basil, oregano, and gin to a jar or container. Seal and let the mixture infuse in the refrigerator for at least 8 hours and up to 3 days.

  • Step 2

    Strain out solids and discard.

To make the Tomato Water:

  • Step 1

    Cut tomatoes into wedges. In a blender, combine tomato wedges with a dash of salt and blend until pulpy.

  • Step 2

    Place the mixture in a fine mesh strainer over a glass or bowl. Refrigerate overnight to allow the liquid to drain out. Do not press the pulp. Discard the solids.

To make the Cocktail:

  • Step 1

    Fill a mixing glass with ice. Add basil and oregano-infused gin, sweet vermouth, Campari, and tomato water. Stir until chilled.

  • Step 2

    Strain the mixture into a cocktail glass over fresh ice.

  • Step 3

    Grate Parmesan cheese over the cocktail.

  • Step 4

    Garnish with pepperoni, fresh mozzarella, tomato, and fresh oregano, if desired.
