ingredients
- 2 cups of cooked orzo pasta + 1/4 cup pasta water
- 2 cups of mushrooms, diced
- 2 cups of shiitake mushrooms, sliced
- 1 large shallot, minced
- 2 tablespoons extra virgin olive oil
- 3 tablespoons unsalted butter
- 5 garlic cloves, grated
- 1/2 cup heavy cream
- 1/2 cup grated parmesan
- 1/2 cup madeira wine
- 2 tablespoons sugar
- Fresh parsley, minced, for garnish
- Salt and pepper, to taste
- Chicken, salmon, or steak (for serving)
Method
Step 1
Cook the orzo pasta according to the package instructions. Reserve 1/4 cup of pasta water. Drain and set aside.
Step 2
In a large skillet, heat the extra virgin olive oil and 1 tablespoon of unsalted butter over medium heat.
Step 3
Add the minced shallot and garlic. Sauté for 2-3 minutes until fragrant.
Step 4
Add the diced mushrooms and sliced shiitake mushrooms. Sauté until golden brown.
Step 5
Pour in the madeira wine and let it simmer until most of the liquid has evaporated.
Step 6
Stir in the remaining 2 tablespoons of unsalted butter, sugar, heavy cream, and grated parmesan. Cook until the mixture becomes thick and creamy.
Step 7
Add the cooked orzo pasta to the creamy mushroom mixture. Toss to combine, adding the reserved pasta water as needed to achieve the desired consistency.
Step 8
Season with salt and pepper to taste. Sprinkle with minced fresh parsley.
Step 9
Serve the Mushroom Orzo as a side or main dish, accompanied by your choice of chicken, salmon, or steak.
