ingredients
- 1/2 pound pasta
- 2 tablespoons unsalted butter
- Olive oil
- 2 garlic cloves, minced
- 6 ounces cherry tomatoes
- 1 shot vodka (preferably Tito's)
- 1 cup heavy cream
- Kosher salt and freshly ground black pepper, to taste
- Red pepper flakes, to taste
- 1/2 cup grated Parmesan cheese, plus more for serving
- Fresh basil, for garnish
Method
Step 1
n a pot of salted water, cook the pasta until it's al dente. Drain and set aside.
Step 2
In a pan, melt butter with a dash of olive oil over medium heat.
Step 3
Add the minced garlic and cherry tomatoes to the pan. Sprinkle with salt and cook until the tomatoes soften, then gently smush them.
Step 4
Stir in tomato paste and cook for a minute or two to incorporate.
Step 5
Add vodka and mix. Follow with 1 cup of heavy cream, stirring until well combined.
Step 6
Allow the sauce to simmer for 5-7 minutes to burn off the alcohol. Season the sauce with salt, pepper, and red pepper flakes to taste.
Step 7
Add the cooked pasta to the sauce. Pour in a dash of pasta water and Parmesan cheese. Mix well.
Step 8
Cook for a few more minutes until the pasta is well-coated. Garnish with extra Parmesan and fresh basil leaves before serving.
