Ingredients for Turkey Meatloaf
- 1 pound ground turkey
- 1 cup gluten free panko crumbs
- 1 egg
- 1 tabelspoons worcestershire sauce
- 1 teaspoons minced garlic
- 1/2 teaspoons kosher salt
- pinch of pepper
- 1/2 cup of ketchup
Method
Turkey Meatloaf
Step 1
Mix all the ingredients together in a bowl. Using an ice cream scoop to scoop equal sizes (approx 5 sliders).
Step 2
Add 2 tbsp of olive oil to the skillet over medium/low heat, add the meatloaf scoops to the skillet. Cover and cook approx 5 minutes per side. Cook until golden brown on each side. Internal temperature should read 165.
Step 3
Top with the chutney.

Ingredients of Tomato Raisin Chutney
- 3 cups cherry tomatoes, sliced
- 1 small onion, diced
- 1 tablespoons brown sugar
- 1/2 teaspoons kosher salt
- 1/2 cup raisins
- 3 tablespoons cider vinegar
- dash of cayenne pepper
- 1 bay leaf
- 1 teaspoons olive oil
Tomato Chutney
Step 1
In a stock pot over medium heat add the olive oil and the onion. Cook until translucent.
Step 2
Add the rest of the chutney ingredients to the pot and reduce the heat to med/low. Cook for 20 minutes until thickened.
Step 3
Remove the bay leaf before serving.
