ingredients
- 1 pound ground turkey
- 1 tablespoons olive oil
- 14 ounce can of black beans, drained and rinsed
- 1 tablespoons ancho chili powder seasoning
- splash of water
- 1/2 teaspoons kosher salt
- 1/4 teaspoons black pepper
- 1 cup dairy free pepper jack cheese
- gluten free tortillas
- 1 can salsa verde enchilada sauce
- Toppings: juiced limes, avocado, fresh cilantro and sour cream
Method
Step 1
Preheat the oven to 375 degrees.
Step 2
In a skillet add the ground turkey and the olive oil.
Step 3
Cook the turkey, add the salt, pepper, water and ancho chili powder seasoning. Mix well.
Step 4
Turn off heat and add the black beans and the cheese.
Step 5
Spray a casserole dish with non stick spray. Scoop some mixture into a tortilla, roll and place in the baking dish.
Step 6
Once done pour the salsa verde on top and bake for 20 minutes.
Step 7
Pull, squeeze some fresh lime juice on top and add your favorite toppings.
