ingredients

  • 1 pound ground turkey
  • 1 tablespoons olive oil
  • 14 ounce can of black beans, drained and rinsed
  • 1 tablespoons ancho chili powder seasoning
  • splash of water
  • 1/2 teaspoons kosher salt
  • 1/4 teaspoons black pepper
  • 1 cup dairy free pepper jack cheese
  • gluten free tortillas
  • 1 can salsa verde enchilada sauce
  • Toppings: juiced limes, avocado, fresh cilantro and sour cream

Method

  • Step 1

    Preheat the oven to 375 degrees.

  • Step 2

    In a skillet add the ground turkey and the olive oil.

  • Step 3

    Cook the turkey, add the salt, pepper, water and ancho chili powder seasoning. Mix well.

  • Step 4

    Turn off heat and add the black beans and the cheese.

  • Step 5

    Spray a casserole dish with non stick spray. Scoop some mixture into a tortilla, roll and place in the baking dish.

  • Step 6

    Once done pour the salsa verde on top and bake for 20 minutes.

  • Step 7

    Pull, squeeze some fresh lime juice on top and add your favorite toppings.
