ingredients
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 ground fresh ginger
- 1/2 cup sugar
- 1/2 cup brown Sugar
- 2 1/2 cups gluten free 1.1 flour
- 1 teaspoons baking soda
- 1 teaspoons cinnamon
- 1 teaspoons cloves
- 3/4 cup unsalted butter
- 1/4 cup molasses
- 1 cup sugar to roll the cookies in
Method
Step 1
Preheat the oven to 350 degrees.
Step 2
Line baking sheets with parchment paper.
Step 3
In a mixing bowl add the eggs, vanilla, both sugars and butter. Beat for 5 minutes until completely smooth. Add the rest of your ingredients and mix.
Step 4
Using an ice cream scoop, scoop out the cookie mixture and roll in the sugar then place on the parchment paper. Space them 2'-3" apart.
Step 5
Bake in the oven for approx 8-12 minutes until golden brown.
Step 6
When you baking them closer to the 12 minute mark they will be crunchier.
Step 7
Pull out, cool a couple minutes before moving to a cooling rack
