ingredients

  • 2 1/4 cups Gluten free flour
  • 1 1/2 tablespoons Baking powder
  • 1/2 teaspoons Kosher salt
  • 2 Bananas
  • 2 cups strawberries, chopped
  • 1 1/2 cup Sugar
  • 3/4 Unsalted butter (room temp)
  • 2 Eggs
  • 2 teaspoons Vanilla
  • 15 drops Cream concentrate
  • 1 teaspoons Vanilla extract
  • 1 cup Dark chocolate chips

Method

  • Step 1

    Preheat the oven to 375 degrees.

  • Step 2

    Spray a loaf pan with nonstick spray.

  • Step 3

    In a mixing bowl add the bananas, strawberries and sugar. Mix until the fruit is broken up by half.

  • Step 4

    Add the eggs, concentrate, vanilla and butter mix well. Add all of the dry ingredients and mix until just incorporated. Fold in the chocolate then pour into the pan.

  • Step 5

    Cook for approx 25-35 minutes or until a toothpick comes out clean.

  • Step 6

    Allow to cool completely before cutting into it.

  • Step 7

    Optional: drizzle dark chocolate on top of the loaf
