Coconut Cauliflower Sweet Potato Tumeric Bisque

ingredients
- Osso Good Golden Broth
- 2 sweet potatoes, peeled and cubed
- 1 cauliflower, cubed
- 2 apples, peeled and cubed
- 1 medium onion, diced
- 1 tbsp olive oil
- 1 1/2 tsp ras el hanout seasoning
- 1 1/2 tsp kosher salt
- 1 can lite coconut milk
- Optional, fresh cilantro
Method
Step 1
Preheat the oven to 400 degrees.
Step 2
On a sheet pan add the olive oil, sweet potatoes, cauliflower, apples, onion, seasoning and salt.
Step 3
Toss together and roast for 20-25 minutes until lightly browned and the sweet potatoes are soft.
Step 4
In a stock pot add the broth and roasted veggies, using an immersion blender, blend everything smooth.
Step 5
Add the coconut milk, place over medium heat. Taste for salt and pepper. Enjoy!
