Ingredients for Baby Spinach Pesto
- 2 cups baby spinach
- 2 tbsp fresh basil
- 2 tbsp fresh parsley
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tsp minced garlic
- 1/2 cup pine nuts
- 1 lemon, juiced
- 1/2 cup olive oil

- gluten free pizza crust
- 2 cups cooked chicken
- 1/4 cup black olives, sliced
- 1/2 cup marinated artichoke hearts, sliced
- 2oz goat cheese
Method
Step 1
To make the baby spinach pesto, Add all the pesto ingredients to a blender and mix until smooth.
Step 2
Preheat the oven to 450.
Step 3
Place the pizza crust on a baking sheet then brush the pizza crust with olive oil.
Step 4
Spread pesto over the crust, add chicken, artichokes, olives and crumble goat cheese.
Step 5
Bake for 10-15 minutes until the crust bottom is golden brown.
