ingredients

  • 1 pound chicken breast, sliced thin in long thin slices
  • 1/2 cup sweet peppers, sliced
  • 1 onion, sliced
  • 1 poblano pepper, diced
  • 1 tablespoons ancho taco seasoning
  • 1/2 teaspoons kosher salt
  • 1/4 teaspoons black pepper
  • 2 limes, juiced
  • 1 tablespoons coconut oil
  • Optional toppings: refried beans, sour cream, cheese, lettuce and fresh cilantro

Method

  • Step 1

    In a skillet over medium heat add the oil and heat up the pan.

  • Step 2

    Add the chicken, salt and pepper.

  • Step 3

    Cook until golden brown, lower heat and add the onions and peppers.

  • Step 4

    Sautee for a few minutes and then add the seasoning. Mix well, juice two limes on top.
