ingredients

Chicken Marinade

  • 1 pound chicken breast, cut into cubes
  • 1/2 cup sriracha tahini dressing
  • 1/4 cup soy sauce, gluten free

Method

Chicken Marinade

  • Step 1

    To make the chicken marinade, add all the ingredients together in a bowl

  • Step 2

    Cover and let marinade in the fridge for at least 2hrs.

Main Dish

  • Marinated chicken breast
  • 1 cup whole cashews
  • 1/2 cup sweet peppers, sliced
  • 2 cups bok choy, chopped
  • 2 tablespoons coconut oil
  • 2 teaspoons minced garlic
  • pinch of salt and pepper
  • 2 tablespoons chili sauce
  • 1 teaspoons miso paste
  • 1/2 cup water
  • 2 tablespoons cornstarch
  • 2 tablespoons hoisin sauce
  • 1 tablespoons soy sauce, gluten free
  • 1 teaspoons sesame oil

Main Dish

  • Step 1

    To make the main dish, add the oil in a skillet over medium heat.

  • Step 2

    In a small bowl add the chili sauce, garlic, miso, water, cornstarch, hoisin, soy sauce and sesame oil and mix well.

  • Step 3

    Add the chicken to the skillet, brown each side 5-10 minutes cooking time

  • Step 4

    Add the bok choy, reduce heat to low and add the peppers, cashews and sauce.

  • Step 5

    Toss until thickened and serve with butter lettuce or rice.
