ingredients

Ingredients for Blood Orange Glaze

  • 1/2 cup blood orange juice
  • 1 tsp orange zest
  • 2 tbsp coconut sugar
  • 1/2 tsp kosher salt
  • 1 tsp Gochugaru korean red chili pepper flakes
  • 1 tbsp cider vinegar
  • 1 tsp ground coriander
  • 2 tbsp honey
  • Your favorite flakey style fish

Ingredients for Salsa

  • 1 avocado, cubed
  • 1 cup english cucumber, diced
  • 1/2 tsp Gochugaru korean red chili pepper flakes
  • pinch of salt and pepper
  • 1 tbsp rice vinegar
  • 2 cups pineapple, chopped
  • 2 limes, juiced
  • 1 blood orange, juiced
  • 1 tsp lime zest
  • 1 tsp honey
  • 2 tbsp fresh cilantro, chopped

Method

Blood Orange Glaze

  • Step 1

    Preheat the oven to 375. Bring all the ingredients of the blood orange glazed fish tacos to a boil in a stock pot, then reduce heat to thicken the sauce. Boil for approximately 10 minutes and set aside.

  • Step 2

    Spray a baking pan with non stick spray, place your fish on the baking dish.

  • Step 3

    Brush some glaze on the fish. Bake, and baste every 5 minutes.

  • Step 4

    Cook until fis until done. Depending on thickness, it will flake when you take a fork to the center.

  • Step 5

    Brush some more glaze on. Place on a tortilla and add salsa.

  • Step 6

    To make the salsa, mix all the salsa ingredients together in a bowl.
