For the Cream Cheese Layer
- 8 ounces (1 block) cream cheese, at room temperature
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar

For the Coffee Cake
- 2 cups gluten-free flour or all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 2 large eggs, at room temperature
- 2/3 cup granulated sugar
- 1 1/2 cups sour cream, at room temperature
- 1 cup (2 sticks) unsalted butter, at room temperature
- 1 tablespoon vanilla extract
- 1/2 teaspoon cinnamon

For the Streusel Topping
- 1 1/4 cups chopped walnuts
- 1 1/2 teaspoons cinnamon
- 1/2 cup light brown sugar
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 Joyfully Grown Granny Smith apple, peeled and finely diced
- 1 Joyfully Grown Honeycrisp apple, peeled and finely diced

For the Glaze
- 1 1/2 cups powdered sugar
- 2 teaspoons milk
Method
Step 1
In a bowl, combine cream cheese, vanilla extract, and powdered sugar. Mix until smooth and set aside.
Step 2
Preheat the oven to 350°F and spray an 8x8-inch or 9-inch round baking dish (at least 2 inches deep) with nonstick baking spray.
Step 3
In a mixing bowl, add the sugar and butter. Mix on high for 3 minutes.
Step 4
Mix in the eggs, sour cream, and vanilla extract. Scrape down the sides of the bowl.
Step 5
Add the dry ingredients (flour, baking powder, baking soda, kosher salt, and ground cinnamon) and mix until well incorporated.
Step 6
In a separate bowl, combine the streusel ingredients (chopped walnuts, ground cinnamon, brown sugar, and butter), minus the apples, and mix well.
Step 7
Pour half of the cake batter into the baking dish. Spread the cream cheese mixture on top.
Step 8
Sprinkle half of the streusel mixture in the center and half of the diced apples on top.
Step 9
Add the remaining cake batter, spreading it evenly. Sprinkle the remaining apples and streusel on top.
Step 10
Bake for 55-70 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
Step 11
For the glaze, mix the powdered sugar and milk until smooth. Drizzle over the cooled cake.
