Tender lemon loaf is the perfect spring time snack. Make it for brunch, or tea time. Top it off with glaze and fresh blueberries.

ingredients
- 300 grams flour
- 100 grams brown sugar
- 100 grams coconut sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon vanilla powder
- 250 grams oat milk
- 100 grams coconut oil
- 50 grams lemon juice
- zest of one lemon.
Method
Step 1
Preheat the oven to 350°F. Add the ingredients in a bowl and mix. Pour it into a prepared loaf pan and bake for 50 minutes.

For the icing:
- 200 grams icing sugar
- 1 tablespoon lemon juice
Step 1
In a bowl mix the lemon juice and icing cake. Add more lemon juice if needed. Top the cake with that and add blueberries
