"For you, a Ginger coated ??Moringa-Coconut ?? Popsicle. I wanted to make a sweet treat that was tasty and had at least some nutritional value. ? This treat came about while experimenting with popsicle flavors, textures, and ingredients. I made a sampler pack of different flavors, and this one was quite good. Once I perfect a full batch of these green beauties, I will share the recipe. If you are unaware of the significant benefits of Moringa, please do yourself a favor and research it. Recipe Card

ingredients

  • 2 cups full fat coconut milk
  • 1/3 cup sugar
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon fresh ginger
  • 1 tablespoon moringa powder
  • pinch of salt

Method

  • Step 1

    In a medium saucepan, combine coconut milk, sugar, vanilla and ginger over medium low heat. Stir frequently until sugar is completely dissolved, 5-7 mins.

  • Step 2

    Reduce to low heat and add moringa powder and stir until fully incorporated. There should be no lumps.

  • Step 3

    Add a pinch of salt and continue stirring for an additional 3-5 minutes. Remove from heat and set aside. Let mixture cool to room temperature.

  • Step 4

    Once cool, add mixture to a blender or use an immersion blender and blend for 2-3 minutes. This reincorporates the fat and allows for creamier ice pops.

  • Step 5

    Pour mixture into molds and freeze for 6-8 hours.

  • Step 6

    Once frozen you can enjoy directly out of the popsicle mold or finely grate fresh ginger on top first to add a little extra pop on the palate.
