ingredients
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 cup shallots, sliced
- 1 cup baby bella mushrooms
- 1 cup shiitake mushrooms
- 1 ounce red wine
- 1 14 oz jar EPIC Beef Jalepeño Sea Salt Bone Broth
- salt, to taste
- black pepper, to taste
- 2 baguette slices
- 2 tablespoons shredded Gruyère cheese
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped chives, for garnish
Method
Step 1
Preheat broiler.
Step 2
Heat butter and olive oil in a skillet. Add shallots, baby bella and shiitake mushrooms. Cook over low heat for 10 minutes.
Step 3
Add red wine, then Epic Bone Broth. Cook over medium heat for 5 minutes. Season with salt and pepper to taste.
Step 4
Ladle soup into 2 heat-resistant cups. Top with baguette slices and cheese. Broil for 3 minutes. Garnish with chives.
