ingredients

  • 2 large red bell peppers
  • 1 red onion
  • 3 garlic cloves
  • 4 tablespoons balsamic vinegar
  • 1-2 teaspoons paprika
  • Salt

Method

  • Step 1

    Place the red peppers, onion and garlic cloves on a baking tray, lightly oiled and seasoned at 200c for 20-25minutes. (Keep in mind that the cloves and onion will take a lot quicker to roast.)

  • Step 2

    Allow roasted veg to cool for 10 mins before starting the next step.

  • Step 3

    Remove the skin of the red peppers by either peeling or scraping.

  • Step 4

    Place all the ingredients into a food processor or blender and blend until smooth. Make sure to add enough salt and acidity (vinegar) to the sauce. Serve immediately or store in an airtight container.
