ingredients
- 1 yellow onion, diced
- 2 teaspoon garlic, minced
- 1 4.5 oz can mild green chiles
- 1 28 ounce can diced tomatoes
- 2 15 ounce can black beans, drained and rinsed
- 1 8 ounce can tomato sauce
- 3 tablespoon taco seasoning
- 1 15 ounce can corn
- 2 diced orange bell peppers
- 1 32 ounce low sodium beef broth
- 1 pound ground beef
Method
Step 1
In a large stock pot, add diced onions. Cook until translucent and fragrant, about 3 minutes.
Step 2
Add garlic and cook for 1 minute more.
Step 3
Add beef and cook until no more pink remains. Drain fat from beef in a strainer.
Step 4
Add green chile, diced tomatoes, black beans, tomato sauce, taco seasoning, corn, bell peppers and beef broth.
Step 5
Cook on medium heat until steaming.
Step 6
Top it off with fresh avocado, sour cream, cilantro and cheese. Serve with tortilla chips. Enjoy!
