The best part is that this hearty soup recipe comes together in mere minutes. As fast as you can open, dump and heat. Great for a weeknight with some tortilla chips and some cold weather."

ingredients

  • 1 yellow onion, diced
  • 2 teaspoon garlic, minced
  • 1 4.5 oz can mild green chiles
  • 1 28 ounce can diced tomatoes
  • 2 15 ounce can black beans, drained and rinsed
  • 1 8 ounce can tomato sauce
  • 3 tablespoon taco seasoning
  • 1 15 ounce can corn
  • 2 diced orange bell peppers
  • 1 32 ounce low sodium beef broth
  • 1 pound ground beef

Method

  • Step 1

    In a large stock pot, add diced onions. Cook until translucent and fragrant, about 3 minutes.

  • Step 2

    Add garlic and cook for 1 minute more.

  • Step 3

    Add beef and cook until no more pink remains. Drain fat from beef in a strainer.

  • Step 4

    Add green chile, diced tomatoes, black beans, tomato sauce, taco seasoning, corn, bell peppers and beef broth.

  • Step 5

    Cook on medium heat until steaming.

  • Step 6

    Top it off with fresh avocado, sour cream, cilantro and cheese. Serve with tortilla chips. Enjoy!
