ingredients

  • 1 almonds
  • 1 cup cashews
  • 1 1/4 cup egg white protein powder
  • 1/2 cup cocoa powder
  • 3/4 pound dates, pitted and halved
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon salt
  • 1/3 cup mini chocolate chips, optional

Method

  • Step 1

    Line a 9"x13" pan with parchment paper. Set aside.

  • Step 2

    Place nuts in food processor and process until fine. About 1-2 minutes.

  • Step 3

    Pulse in egg white protein and cocoa powder until combined.

  • Step 4

    While continuously processing add pitted dates a few at a time.

  • Step 5

    Pour mixture into a large mixing bowl and pour oil over crumb mixture using a rubber spatula until combined.

  • Step 6

    Add chocolate chips if desired.

  • Step 7

    Evenly distribute mixture into pan and firmly press down so no loose clumps remain.

  • Step 8

    Sprinkle with sea salt if desired.

  • Step 9

    Chill in refrigerator for 1 hour.

  • Step 10

    Remove and cut into bars. Store in an airtight container or individually packaged for an easy grab and go snack.

  • Step 11

    Will last 2 weeks in refrigerator or 3 months in freezer.
