Brownie Base

  • 1 cup fresh medjool dates, pitted
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 6 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup pecans

Coconut Frosting

  • 1 cup canned full fat coconut milk, chilled overnight
  • 2 tablespoons cocoa powder

  • dark chocolate, shaved
  • crushed freeze-dried strawberries

Method

  • Step 1

    Add all brownie base ingredients (except pecans) to a food processor and process until it turns into a sticky dough. Go in with the pecans and a small dash of water to help the blending process. Pulse for a few more seconds until combine.

  • Step 2

    Press the brownie mixture into a square 20x20cm baking tray lined with parchment paper. Ensure to press the mixture down firmly to create a strong base. Pop into the fridge.

  • Step 3

    For the frosting, scoop out the thick coconut cream from the chilled coconut can and transfer to a bowl with the cocoa powder. Using an electric hand mixer, mix until smooth.

  • Step 4

    Spread the coconut frosting on top of the brownie base. Sprinkle with shaved dark chocolate and crushed freeze-dried strawberries. Place back into the fridge for 1-2 hours before enjoying!
