2 cups cooked quinoa
3 1/2 to 4 cups leafy greens (I used a kale medley)
1/2 cup sliced red onion
1/2 cup raw walnuts
1/4 cup raw pumpkin seeds
Smokey Mustard Dressing Ingredients:
1/2 Tbsp mustard
1.5 Tbsp extra-virgin olive oil
1/8 tsp smoked paprika
1. In a large bowl, toss quinoa with greens, onion, walnuts, and seeds.
2. Mix all dressing ingredients until well-combined. Drizzle over prepared quinoa salad.
