ingredients

  • 1 1/4 cups oat flour
  • 3/4 tablespoons baking powder
  • 1/4 teaspoon sea salt
  • 2 eggs
  • 2 mashed ripe bananas
  • 1/2 cup peanut butter
  • 1/4 cup date syrup
  • 1 teaspoon vanilla bean paste
  • 1/2 cup dark chocolate chips

Method

  • Step 1

    Line muffin pan with baking cups. Preheat the oven to 425F.

  • Step 2

    In a bowl add in mashed banana, peanut butter, date syrup, vanilla bean paste, eggs and whisk until well combined.

  • Step 3

    Add in flour, baking powder, salt and mix well. Fold in chocolate chips.

  • Step 4

    Using an ice cream scoop, fill the muffin cups with the batter until it's 3/4 full.

  • Step 5

    Bake them at 425F for the first 5 minutes. Lower the oven temperature to 350F and continue baking for another 10-12 minutes or until inserted toothpick comes out clean.

  • Step 6

    Remove from the oven, let them cool and enjoy!
