ingredients

  • avocado oil spray
  • 1 ounce Annie's Homegrown Organic Cheddar Bunnies, crushed
  • 12 Annie's Homegrown Organic Cheddar Bunnies, for topping
  • 1 store-bought refrigerated pie crust
  • 1 cup milk, organic
  • 1 cup zucchini spirals, organic
  • 1 cup frozen peas and corn, organic
  • 1/4 cup flour
  • 1/4 cup sweet onion, organic, chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic salt
  • 1/3 cup oven roasted turkey or chicken breast, diced, optional

Method

  • Step 1

    Preheat oven 375℉. Lightly coat muffin cups with avocado oil spray.

  • Step 2

    Roll out pie crust. Using a round cookie cutter or rim of a drinking glass, cut out 12 circles. You might need to roll again to make them slightly bigger. Gently press rounds in bottoms and up sides of muffin tins.

  • Step 3

    Add all ingredients (except avocado oil spray and Annie's Homegrown Organic Cheddar Bunnies) into a medium nonstick skillet. On medium heat, mix together until well blended.

  • Step 4

    Add 1 tablespoon filling into each muffin cup. Top with crushed and uncrushed Annie's Homegrown Organic Cheddar Bunnies and bake for 20 minutes.
