ingredients

  • 1 cup walnuts, toasted and cooled
  • 1 cup oat flour
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons cold and cut into cubes vegan butter
  • 2 tablespoon maple syrup
  • 2 tablespoons coconut sugar
  • 1/8 teaspoon salt
  • 3 Harry & David Royal Riviera Pears, cored scooped out and cut in half lengthwise
  • 1/2 cup fresh orange juice

Method

To make the crumble:

  • Step 1

    In a food processor, add toasted walnuts, oat flour, ground cinnamon, vegan butter, maple syrup, coconut sugar, and salt. Pulse in 3 second intervals until walnuts are smaller size, butter is absorbed, and mixture holds together when pinched. Place crumble in fridge for 20 minutes or until ready to use.

Prepare the pears:

  • Step 1

    Pour orange juice into a shallow baking dish. Lay the pears cut-side down in orange juice. Let sit for 20 minutes. While pears are soaking, preheat oven to 350F degrees.

  • Step 2

    Turn pears over and arrange cut-side up and top with 3 tablespoons of crumble. Place in oven and bake for 25-30 minutes, or until the top of the crumble has browned.

  • Step 3

    Remove from oven and let cool for 20 minutes before serving.
