ingredients

  • 3 tablespoons olive oil
  • 2 cups onion, finely chopped
  • 1/2 cup fresh ginger, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 1/2 pounds extra jumbo shrimp, peeled, deveined
  • 1 28-ounce can Muir Glen Fire Roasted Diced Tomatoes
  • 3/4 cup white wine
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • pasta, cooked, for serving
  • fresh parsley, chopped, for serving, optional
  • Parmesan cheese, for serving, optional
  • red pepper flakes, for serving, optional

Method

  • Step 1

    Heat olive oil in a large frying pan over medium heat. Add onions, ginger and garlic, cook until onions become translucent.

  • Step 2

    Stir in Muir Glen Fire Roasted Diced Tomatoes, wine, salt, and pepper. When sauce begins to boil, reduce heat to medium-low and continue to simmer until most of the liquid has reduced and sauce has thickened, about 15 to 20 minutes.

  • Step 3

    Increase heat to medium-high and add shrimp. Stir frequently until shrimp are cooked, about 3 to 6 minutes. Season to taste and serve over noodles. Garnish with parsley, cheese and red pepper flakes, if desired, before serving.

  • Step 4

    Note: Do not grate the ginger as this will change the texture of the sauce. Do not overcook the shrimp. They are cooked when they are firm and curled almost into circles. Cook your choice of noodles before adding shrimp.
