ingredients

Quick Pickled Vegetables

  • 1/4 cup seasoned rice wine vinegar
  • 1/4 cup water
  • salt
  • 1/2 red onion, sliced thin
  • 1 jalapeno, sliced thin

ingredients

Black Beans

  • 1 can black beans, drained
  • 1 teaspoon salt
  • 1 teaspoon of each cumin, paprika, cayenne, garlic powder

Toast Assembly

  • Favorite bread (gf if needed)
  • Avocado
  • Egg, cooked as desired chopped
  • Fresh cilantro, for garnish

Method

  • Step 1

    Add rice wine vinegar, water, and salt to a small bowl. Stir until combined. Add sliced red onion and jalapeno and let sit for 20 minutes. Set aside.

  • Step 2

    To a small saucepan, add drained black beans, salt, and seasonings. Cook for 10-15 minutes over medium heat until thickened. Stir frequently to ensure beans don’t stick to the bottom of the pan.

  • Step 3

    Toast your bread. Top with black beans, avocado slices, and an over easy egg. Garnish with pickled red onion/jalapenos, and chopped cilantro. Serve immediately and enjoy!
