No-Bake Chocolate Oat Bars

ingredients
- 1/2 cup vegan butter
- 1/2 cup sugar (such as brown or coconut) or sub 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 cups rolled oats
- 3/4 cup vegan chocolate
- 1 cup almond butter
Method
Step 1
Grease an 8"x8" baking dish.
Step 2
In a large microwave safe bowl, heat the butter, sugar and half of the almond butter together for 1 1/2 minutes or until the sugar starts to dissolve into the butter. Stir and heat again for an additional 30 seconds. (The sugar doesn’t need to be 100% dissolved but it shouldn't be grainy)
Step 3
Stir in the vanilla, salt, and oats and press down 3/4 of the mixture into greased baking dish, being sure to press down firmly.
Step 4
In a small bowl, heat the chocolate and the remaining almond butter in the microwave for a minute, stir and heat again as necessary. Pour the mixture over the oats and spread out evenly, reserving enough to drizzle on top for garnish. Top with the remaining oat mixture and refrigerate until set (at least two hours). Cut and serve!
