Tofu & Veggie Lettuce Cups With Thai Peanut Sauce
The best way to get kids to eat vegetables, is to chop a lot of veggies, while prepping dinner, eat in front of them, enjoy them yourself, and they will join you in eating the veggies too! ?? That is what happened when I was making these awesome #glutenfree and #vegan, Tofu and Veggie Lettuce Cups, with a Thai Peanut Sauce, garnished with chopped cilantro, spring onions and black sesame seeds! My kids started with eating a small bowl of shredded carrots, then came the purple cabbage, and then came the butter lettuce! Thrilled! ??? I had prepped the tofu yesterday by marinating the tofu for an hour, in a sauce that I made with tamari sauce, rice wine vinegar, brown sugar, chilli sauce, ginger, garlic, toasted sesame oil, then sauteed till golden brown. For the Peanut Sauce, mix peanut butter, tamari sauce, lime juice, rice wine vinegar, honey, black pepper, little toasted sesame oil and mix well! Assembly : In a butter lettuce cup, add in a mix of the shredded carrots/purple cabbage/red bell pepper. Add in the prepped, sautéed and chopped tofu. Drizzle with the Thai Peanut Sauce. Garnish with chopped cilantro, spring onions, and black sesame seeds and a squeeze of lime on top!
