Lunch was a Mediterranean Quinoa Kale Salad with diced tomatoes, cucumbers, red onions, red bell pepper, mint, marinated feta/olives/garlic cloves(that I marinated the night before) in cooked quinoa, and baby kale tossed in it, with a honey-lemon-garlic dressing. @gourmegg Greek seasoning used in the dressing and the marination! #glutenfree, light and absolutely refreshing!!
