Smokey Fajita Tofu Scramble Toast
SMOKEY FAJITA SCRAMBLED TOFU on toast with a dollop of cilantro lime "sour cream". As much as I love a sweet #breakfast sometimes I need a hearty and savory one! Smokey Fajita Tofu Scramble Toast

Ingredients:

1 block smoked tofu (organic)
1-2 shallots julienned
1 garlic clove diced
1|2 yellow capsicum julienned
1|2 tbsp olive oil for cooking
1 tsp cumin powder
1 tsp smoked paprika powder
1|3 of a red chili diced
Sea salt and black pepper to taste
200 gr vegan "sour cream"
1 small bunch cilantro chopped
Juice of 1 lime (for the scrambles and "sour cream")
4 slices of bread (#gf or #wheatfree and toasted)
1 avocado thinly sliced
Water cress (optional)

Directions:

Heat up the olive oil in a cast iron skillet (gives it extra smokey flavor) then add the shallots and garlic. Meanwhile, smash the tofu with a potato smasher until it resembles scrambled egg (you can also pulse it a few times in a food processor). Add to the onions and garlic and cook for a few minutes, stirring regularly. Add the spices and chili and keep cooking for a couple minutes then add half of the lime juice and season with salt and pepper to taste. Add the "sour cream", the chopped cilantro and the remaining lime juice to a small bowl, season with salt and pepper and mix well. Now it's time to assemble. Layer each slice of bread with some avocado, top with scrambled tofu, add a dollop of cilantro lime "sour cream" and finish with some water cress. Enjoy!
