Recipe

Pistachio Popsicle and Carrot granola

  • 2 cups Coconut milk
  • 1 cup pistachios
  • 1 tablespoons cacao butter
  • 2 tablespoons maple syrup
  • 2 tablespoons Monk fruit sugar ( lakanto)
  • 2 tablespoons Date syrup
  • 1 tablespoons vanilla paste
  • 1/ 4 teaspoons salt

Method

  • Step 1

    On a small pot , mix all the ingredients simmer on medium low for about 10 minutes to melt the cacao butter and integrate all the flavors. Let it rest for about 5 min

  • Step 2

    Place mixture in the blender, and blend until you achieve a smooth cream. This is your ice cream base.

  • Step 3

    Take your Popsicle molds and fill halfway through , add granola in the middle and finish with more pistachio mix. Garnish with edible flower petals, coconut shavings, carrot shavings and pistachio pieces.

  • Step 4

    Place on the freezer until ready to eat.

Carrot Pistachio Granola

  • 1/ 2 cup grated carrots
  • 1/ 2 cup oats
  • 1/ 2 cup walnuts
  • 1/ 2 cup coconut flakes
  • 2 tablespoons maple syrup
  • 1 tablespoons vanilla paste
  • 2 tablespoons coconut oil
  • 1/ 2 teaspoons salt
  • 1 pistachios

Carrot pistachio granola

Method

  • Step 1

    Mix: Carrots coconut , coconut oil, vanilla salt & maple syrup on the blender.

  • Step 2

    On a mixing bowl add: pistachios, walnuts, oats and mix with the carrot paste made on the blender.

  • Step 3

    Spread granola on a baking sheet pan with parchment paper underneath .

  • Step 4

    Bake at 350 for about 20-30 min checking and mix every 8 min so it bakes evenly. Take out of the oven once is golden brown.

  • Step 5

    Let it cool completely before using it. Once is cool you can proceed to assemble your Popsicles.
