How to Make a Pesto

My Recipes
I signed up to host a #prettysimpledinnerparty with @acouplecooks. I wasn’t sure if we’d be able to host other friends and family, but I figured at the very least, it’d give me a little extra motivation to sit down at the table with my husband and kids. It wasn’t glamorous. There were no centerpieces, no linen napkins (although we used placemats for the first time in forever), and half the dishes on the table were made of plastic. It was absolutely messy and chaotic and challenging. Keeping three kids under three in their chairs for more than 10 seconds may go down as one of my life’s greatest accomplishments. But we made it to the table. We spent a few moments face to face, interrupted only by each other and not the clamor of the outside world. It was another day capped off by an evening together over bowls of soup and sides of chicken nuggets (for the kiddos, of course, and not really meant as part of the “dinner party” menu 😜). We came to the table...together. And for that I’m so, so thankful. [Swipe for a behind the scenes picture of our not so fancy dinner party. 😊 Also, the Creamy Vegan Potato Chowder from #prettysimplecooking was so good! I just ate a second bowl after the kids went to bed!]
Potty training twins makes me stress eat carbs. ⠀⠀ ⠀⠀ I literally wiped out in a puddle of pee on the kitchen floor. (Yes, it’s ok to laugh. After a few hours the situation is finally funny to me.) I may have sworn loudly and then had to apologize to my kids. My daughter wiped out right after me despite my telling her to stay put. Meanwhile, the baby screamed because the poor little guy was so hungry, but all attention was devoted to naked toddlers peeing all over my house. And I needed to wrangle up said toddlers before our contractor arrived to fix our bathroom floor. Thankfully all pee-puddles were cleaned before he arrived, and all is finally calm.⠀⠀ ⠀⠀ Now I’m letting myself feast on some good ‘ol bread and butter before we start these shenanigans all over again after nap-time. Lord, help me. ???????? Anyone else in the throes of potty training? Or been there done that and have words of wisdom? I’d love to hear! ⠀ ⠀⠀ [Whole Wheat Cinnamon-Raisin Bread to the rescue. Recipe coming...eventually.]
That day I made rolls on a whim...⠀ ⠀ Wishing today was that day. ??
Ancho Chile Manhattan
New! An Ancho Chile Manhattan that's perfect for snowy days (or any day, really).⠀ ⠀ I first started playing around with this recipe a few months ago, when I was trying to figure out how to use the huge stash of ancho chiles I acquired. Random, I know. ⠀ ⠀ I used Elk Rider Bourbon Whiskey from @heritagedistilling, and instead of the traditional angostura bitters, this version uses orange bitters. The sweet vermouth is partially subbed out for ancho chile simple syrup, which gives the drink a spicy kick.⠀ ⠀ It's a cocktail that will warm you from the inside out - perfect to enjoy on winter evenings, by the fire, with a good book in hand.
Apple Sage Vodka Cocktail
The first Thanksgiving I ever hosted was in our one-bedroom apartment that didn't have a dishwasher. My mom and I stood side-by-side, whipping potatoes and roasting squash. I learned how to make my first-ever turkey, she coached me as I seasoned the stuffing, and we talked through the timing of oven space. And 21 of us sat down together, eating off mismatched plates and taking turns drying the endless amount of dishes that piled up after the meal.⠀ ⠀ I look back on that Thanksgiving with joy. But it’s a joy mixed with grief... ⠀ I'm sharing more about the mix of emotions that come with the holidays, and a recipe for this Apple + Sage Cocktail over at @coffeeandcrumbs.
Warm Spiced Apple Cider
Dreary fall days require a good book in one hand and a mug of hot cider in the other. I changed things up from my normal orange-clove-cinnamon combo and threw an ancho chile into the mix. I absolutely loved it. I know the added heat may not be for everyone, but for me, there's something calming, comforting and pleasantly surprising about the slight kick after every sip. Rest assured, this is a drink that'll keep you warm during those cool fall days!
