ingredients

  • 1/3 cup brown sugar
  • 1/4 cup white sugar
  • 1/3 cup vegan butter
  • 1/4 cup unsweetened oat milk
  • 1 teaspoon vanilla extract
  • 1 1/4 cup all purpose white flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup mini dark chocolate chips
  • handful of mini marshmallows

Method

  • Step 1

    Pre-heat oven to 350 F.

  • Step 2

    In a medium bowl, whisk together both sugars, softened vegan butter, oat milk, and vanilla extract, until there are no clumps.

  • Step 3

    Add flour, baking powder, baking soda, and salt, and fold through the batter with a spatula until just combined. Fold in chocolate chips.

  • Step 4

    Rolls into 10-12 balls and squish 3-4 mini marshmallows in the middle of each ball. Place the cookies on a cookie sheet (lined with parchment paper). Optional: cool the cookies in the fridge for 1/2 hour before baking, or you can even leave them overnight and bake them fresh the next morning.

  • Step 5

    Bake for 15 minutes or until edges are golden brown. Let cool for a few minutes on a cooling rack before enjoying.
