ingredients
- 1/2 cups Oats
- 1 teaspoon Cinnamon
- 1 1/2 cups Coconut Milk
- 2 tablespoons Coconut Cream
- 2 tablespoons Maple Syrup
- 1 teaspoon Vanilla Extract
Method
Step 1
Add coconut milk, vanilla extract, ground cinnamon to a medium-size saucepan and bring to boil.
Step 2
Add rolled oats, maple syrup to boiling coconut milk and mix. Simmer for 7-10 mins. Keep stirring in between to avoid burn at bottom of the pan.
Step 3
Serve in individual bowls with a drizzle of coconut cream and almond butter ( or nut butter of choice ).
Step 4
Toppings are optional but they do add an extra kick to oatmeal. I personally prefer wild blueberries with my coconut oatmeal, use any fruit of your choice!
