Crispy Chicken

  • 2 skinless boneless Chicken Breasts
  • 1 teaspoon Salt
  • 1/4 teaspoon finely ground Black pepper
  • 3 Eggs
  • 1/2 cup Cornstarch
  • 1 cup Avocado oil

Method

Crispy Chicken

  • Step 1

    Chop chicken into bite sized pieces. Coat chicken evenly with salt and pepper.

  • Step 2

    Heat oil in large pan. As oil heats, toss chicken and cornstarch in a bowl to evenly coat. In another bowl, whisk eggs.

  • Step 3

    Dip pieces of chicken in eggs and fry in oil until they are browned and crispy on each side. This should only take about 30 seconds for each side of the chicken. Set Crispy Chicken aside on a plate lined with paper towels.

Sweet Orange Sauce

  • 2/3 cup Orange juice
  • 2/3 cup Brown sugar
  • 1/4 cup Liquid aminos
  • 1/4 cup Rice wine vinegar
  • 1 teaspoon Cornstarch
  • 1/2 teaspoon Salt
  • 1/2 teaspoon granulated Garlic

Sweet Orange Sauce

  • Step 1

    Preheat oven to 350°F. Add all sauce ingredients to a small sauce pan and whisk to combine in medium heat. Bring mixture to a simmer a keep whisking for 10 minutes.

  • Step 2

    Add Crispy Chicken to a baking sheet. Set aside 1/4 cup of the sauce. Pour remaining sauce on chicken and mix. Bake for 10 minutes.

  • Step 3

    After 10 minutes, mix chicken and bake for an additional 5 minutes. When done cooking, add the remaining sauce and serve.
