  • 1 8 ounce (2 cups) boneless skinless chicken breast
  • 3/4 cup Red Gold Black Bean and Corn Salsa
  • 1 (10 ounce) can Red Gold Original Diced Tomatoes with Green Chilies
  • 1 cup Greek yogurt, divided
  • 2 chipotle peppers in adobo sauce (optional), chopped
  • 1/2 large loaf of French Bread or Ciabatta, cut horizontally
  • 4 tablespoons salted butter, melted
  • 1 tablespoon dried oregano
  • 2 teaspoons garlic powder
  • 1 cup shredded mozzarella (or Mexican cheese)
  • 2 teaspoons water
  • 1 tablespoon taco seasoning
  • 2 tablespoons fresh chopped cilantro

Method

  • Step 1

    In a large bowl, combine the chicken, salsa, diced tomatoes, and chipotle peppers (if using) with ½ cup of Greek yogurt.

  • Step 2

    In a small microwave-safe bowl, melt the butter in 20-second increments, stirring in between. Once melted, stir in the oregano and garlic powder.

    Brush the butter mixture onto the cut surfaces of the bread.

    Evenly spread the chicken mixture over the bread and sprinkle the top with cheese.

    Bake at 350°F for 10-12 minutes. Then, broil for 3-5 minutes until the cheese is browned and bubbling.
