- 1 8 ounce (2 cups) boneless skinless chicken breast
- 3/4 cup Red Gold Black Bean and Corn Salsa
- 1 (10 ounce) can Red Gold Original Diced Tomatoes with Green Chilies
- 1 cup Greek yogurt, divided
- 2 chipotle peppers in adobo sauce (optional), chopped
- 1/2 large loaf of French Bread or Ciabatta, cut horizontally
- 4 tablespoons salted butter, melted
- 1 tablespoon dried oregano
- 2 teaspoons garlic powder
- 1 cup shredded mozzarella (or Mexican cheese)
- 2 teaspoons water
- 1 tablespoon taco seasoning
- 2 tablespoons fresh chopped cilantro
Method
Step 1
In a large bowl, combine the chicken, salsa, diced tomatoes, and chipotle peppers (if using) with ½ cup of Greek yogurt.

In a small microwave-safe bowl, melt the butter in 20-second increments, stirring in between. Once melted, stir in the oregano and garlic powder.

Brush the butter mixture onto the cut surfaces of the bread.
