Gooey Pistachio Chocolate Chunk Cookies

ingredients

  • 2 1/4 cups GF flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup softened unsalted butter
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoo vanilla extract
  • 2 eggs
  • 2 cups semi-sweet chocolate chunks
  • 1/2 cup shelled pistachios

Method

  • Step 1

    Preheat oven to 375 degrees

  • Step 2

    Beat butter in a bowl and add both white sugar and brown sugar

  • Step 3

    Add two eggs to the butter and sugar mixture

  • Step 4

    Add in the rest of the dry ingredients

  • Step 5

    Manually stir in chocolate chunks and pistachios

  • Step 6

    Scoop cookie dough onto a parchment lined baking sheet

  • Step 7

    Chill dough on the baking sheet in the refrigerator for 10 minutes

  • Step 8

    Bake cookies for 5 minutes and remove from the oven (do this step only if you like thin cookies)

  • Step 9

    Firmly grasp the baking sheet and pound on the counter for 15 seconds

  • Step 10

    Return cookies to the oven and bake for 10 more minutes
