ingredients

  • 1 cup canned Corn
  • 1 cup canned Brown lentils
  • 4 pieces sun-dried Tomatoes
  • 1/2 juice and zest of Lemon
  • 1 bunch fresh Parsley
  • 1 tablepoons Olive oil
  • 1 teapsoons cracked black Pepper
  • 1 teaspoon Cumin Powder
  • 1/2 minced Garlic

Method

  • Step 1

    Combine lemon juice, lemon zest, minced garlic, cumin powder and olive oil in a jar and shake 1 minute to make a dressing

  • Step 2

    Open and drain the canned or fresh corn and cooked lentils. Add to a bowl, along with chopped parley. sun dried tomatoes and the dressing.

  • Step 3

    Mix well and serve cold.
