ingredients
- 1 cup canned Corn
- 1 cup canned Brown lentils
- 4 pieces sun-dried Tomatoes
- 1/2 juice and zest of Lemon
- 1 bunch fresh Parsley
- 1 tablepoons Olive oil
- 1 teapsoons cracked black Pepper
- 1 teaspoon Cumin Powder
- 1/2 minced Garlic
Method
Step 1
Combine lemon juice, lemon zest, minced garlic, cumin powder and olive oil in a jar and shake 1 minute to make a dressing
Step 2
Open and drain the canned or fresh corn and cooked lentils. Add to a bowl, along with chopped parley. sun dried tomatoes and the dressing.
Step 3
Mix well and serve cold.
