Instant Pot Bacon Tomato Jam

ingredients
- 1 whole (3 to 4 pounds) diced Jalapeno
- 1/2 diced White or Yellow Onion
- 1 pound diced Romat Tomatoes
- 3 ounce precooked Bacon Bits
- 1/2 teaspoon Paprika
- 1 teasopon Salt
- 1/2 teaspoon Liquid Smoke
- 1 tablespoon Worcertershire Sauce
- 1/4 cup Brown Sugar
- 1 tablesp White Vinegar
- 1/3 cup Water
Method
Step 1
Finely dice your Jalapeno and 1/2 an Onion, and chop up 1 lb of Tomatoes. Turn your Instant Pot on Saute mode and drizzle a little bit of Olive Oil at the bottom. Then add the Jalapeno, Onion, Tomatoes, and 3 oz Pre-cooked Bacon Bits. Stir them until fragrant, and the Onion just barely starts to become translucent. This should be about 5 minutes.
Step 2
Add the rest of the ingredients- 1/2 tsp Paprika, 1 tsp Salt, 1/2 tsp Liquid Smoke, 1 Tbsp Worcestershire Sauce, 1/4 cup Brown Sugar, 1 Tbsp White Vinegar, and 1/3 cup Water. Mix together, Then pressure cook for 5 minutes with a 10 minute natural pressure release.
Step 3
After 10 minutes, release the remaining pressure and turn it back on Saute mode. Stir occasionally, for another 10-15 minutes, until thickened. Keep in mind it will thicken a little bit more once refrigerated.
Step 4
When it's done, let it cool and transfer to an airtight container in the fridge. Enjoy on Avocado Toast, Burgers, Eggs, Sandwiches. My favorite way to use it is on Avocado Toast, using my Italian Garlic Loaf, Goat Cheese, Sliced Avoado, and Everything but the Bagel Seasoning sprinkled on top.
