- 1 pound 96/4 lean ground beef
- 1 packet taco seasoning
- 1/2 cup 2% Mexican cheese
- 2 light Laughing Cow cheese wedges
- 2 tablespoons nutritional yeast
- 1/4 cup reduced sodium chicken broth
- 5 low carb tortillas

Low-Cal Avocado Lime Dip
- 1 medium avocado
- Juice from 1 lime
- 1/2 cup water, adjusted to desired thickness
- Sea salt, to taste
- Cumin, to taste
- 1 tablespoon chopped cilantro
Method
Step 1
Brown your 96/4 lean ground beef in a pan over medium-high heat. Add taco seasoning and mix. Add in the chicken broth.
Step 2
Lower the heat and add Mexican cheese, cheese wedges, and nutritional yeast. Mix until well combined.
Step 3
Fill each tortilla into 3rds until it's a cone shape. Fill each pocket with the taco filling. Seal shut using a mixture of all-purpose flour and water as glue and a fork to crimp them shut.
Step 4
Once the pockets are assembled, place them in the air fryer, spray with non-stick cooking spray, and air fry at 400°F for 4-5 minutes.
Step 5
Meanwhile, prepare the low-cal avocado dip by blending the avocado, lime juice, water, salt, cumin, and cilantro until smooth.
Step 6
Serve the taco pockets with dip on the side.
