Sundays are for #pancakes right? 🥞 these are #matcha with a matcha cashew cream on top. And this is what happens when you ask your little assistant to help with the food styling and she just free pours 😜🙈 happy Sunday beautiful people! Ingredients


1 cup oats


5 to 6 spinach leaves


50ml of cashew milk (or any plant based milk)


Half a small avocado


1 teaspoon matcha powder


1 teaspoon vanilla extract


1 teaspoon baking powder


1 tablespoon rice malt syrup


5 tablespoons club soda / sparkling water


 


Method


Simply place your oats, spinach, avocado, matcha, vanilla, baking powder, cashew milk and rice malt syrup into your blender ( I used a nutribullet) blend until smooth. Transfer the very thick batter into a bowl and add in your club soda (this makes them super fluffy). Stir gently and allow to sit for 10 minutes before making your pancakes in a hot skillet - turn when golden. Makes approximately 8 American pancakes.
