These vegan and gluten free chia pudding parfaits have a chocolate banana based smoothie layer and cruncy granola for a healthy breakfast or dessert.

ingredients
For the chia pudding
- 2 tablespoons chia seeds
- 1 teaspoon maple syrup
- 1/2 teaspoon vanilla extract
- 1 1/8 cups cashew milk

For the smoothie
- 2 frozen bananas
- 2 tablespoons cacao powder
- 1 tablespoon peanut butter
- 1/4 cup any plant based milk

- Any granola, for assembling
Method
Step 1
In a bowl, combine the chia seeds, maple syrup, vanilla extract and cashew milk. Stir to combine well, transfer to a glass jar or airtight container and refrigerate overnight.
Step 2
Make the smoothie: add the frozen bananas, cacao powder, peanut butter, and plant milk to a blender and blend until smooth.
Step 3
Assemble the parfaits: in small bowls or jars, add a few spoonfuls of the chia pudding, layer with granola of choice, top with a few spoonfuls of the smoothie and more granola.
