ingredients

  • 1 pound cherry tomatoes
  • 6 garlic cloves, peeled
  • 1/2 cup olive oil
  • kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 pound pasta, cooked according to package instructions
  • Fresh basil, for garnish
  • Crushed red pepper flakes, for garnish
  • Fresh Mozzarella, torn, for garnish

Method

  • Step 1

    Preheat the oven to 325˚F. Add tomatoes and garlic to a large, rimmed sheet pan, then drizzle olive oil on top. Roast for about 45 minutes, or until the tomatoes begin to burst and caramelize.

  • Step 2

    While the tomatoes cook, cook pasta in salted water to desired doneness.

  • Step 3

    Toss warm, cooked pasta with the contents of the sheet pan. Season to taste with salt and pepper, then garnish with fresh basil, crushed red pepper flakes and mozzarella cheese.
