This quick and delicious dish is inspired by classic Greek Shrimp Saganaki with a little twist using crispy SeaPak Butterfly Shrimp for some added crispy texture! Typically served as an appetizer, this light and flavorful feta-studded tomato sauce is traditionally deglazed with ouzo, an anise-flavored liquor ubiquitous in Greece. You can easily substitute white wine if you can’t find ouzo. Dried oregano and red pepper flakes give the tomato sauce an herby, spicy background note, while fresh herbs sprinkled on top add a pop of brightness. The whole dish cooks up in just 30 minutes, so get your bread ready to dig in! Want to serve this as a meal instead of an appetizer? Consider serving atop fluffy rice or some orzo pasta.

ingredients
- 1 (18-ounce) package SeaPak Butterfly Shrimp
- 2 tablespoons olive oil
- 1 medium red onion, small diced
- 3 large garlic cloves, roughly chopped
- 1/3 cup Greek ouzo or white wine
- 1 1/2 tablespoons dried oregano
- Red pepper flakes, to taste (optional)
- 1 (28-ounce) can crushed tomatoes
- 10 ounces Greek feta cheese
- Fresh chopped parsley, for garnish
- Fresh lemon wedges, for serving
- Grilled or toasted bread, for serving
Method
Step 1
Preheat oven to 425F degrees.
Step 2
Arrange SeaPak Butterfly Shrimp in an even layer on a baking sheet. Cook according to package instructions.

3. Meanwhile, heat olive oil in a medium skillet over medium-low heat. Add diced onion and garlic and sauté until softened and translucent, about 5 minutes. Deglaze the pan with ouzo or white wine, scraping any golden bits from the bottom of the pan with a wooden spoon. Stir in oregano, red pepper flakes, and crushed tomatoes until combined and let simmer for 5 minutes.

4. Crumble feta on top of the sauce, then nestle the Seapak Butterfly Shrimp about so that they are halfway submerged in the sauce. Return to the oven and broil for about 3-5 minutes, until feta is golden brown.

5. Garnish with chopped parsley. Serve with fresh lemon for drizzling on top and grilled or toasted bread and enjoy hot.
