This recipe was part of a magical Driscoll's #BerryMoments brunch at The Lynhall in Minneapolis, Minnesota.
1 egg white
3/4 oz Fresh Lemon Juice1 oz Raspberry Syrup1 3/4 oz Lawless Greenway Gin1/2 oz Dolin Dry Vermouth2 dash Bittercube Orange Bitters
Glass: CoupeGarnish: Lemon Peel, zested and discarded
Crack the egg, and separate the white into a large shaker tin. Set aside. Build the rest of the ingredients into the smaller shaker tin, add ice to small shaker, combine the ingredients of the large and small tins, seal together and shake until ice breaks up and the shaker set feels cold.
Break apart the two tins, with the smaller shaker on top, so that the entire contents reside in the larger tin below. Use a hawthorne strainer to strain the ingredients from the larger tin into the now ice-less smaller tin. Discard the “dirty ice” from the large tin, and rinse.
Re-seal the smaller tin with contents, with the recently rinsed larger tin, seal, and shake WITHOUT ICE until the tiny ice particles melt and mix into the drink.
Break apart the two tins, use the Hawthorne strainer and also a fine tea strainer to strain the contents of the large tin into the chilled coupe glass.
Peel a swath of lemon, zest 4 inches over the top of the cocktail and discard the peel.
