Cake Pops

I used this for the cake but only with 1/4 c of sugar. I made 2 batches of batter, then baked in a 9x13 pan. Then once each cake has cooled, break the cake into parts and over a bowl, begin rubbing 2 pieces together to make fine crumbs. Mix all the crumbs with about 2-3 tbs cream cheese frosting (for the strawberry pops, just add equal parts strawberry jam and mix in with the frosting using a mixer before adding to the crumbs). Use hands to mix with crumbs to ensure the mixture feels like a crumb paste. Make 3/4 in circumference balls rolled using your hands (periodically wash and dry your hands when the dough starts to stick to your hands). Lay balls on a tray and freeze for atleast 40 minutes. Melt chocolate for 1 minute in a deep small bowl, remove from microwave and add some safflower or veggie oil to help keep the chocolate liquified for longer at this point. And if it isn't fully melted yet, microwave for 30 sec intervals. For white chocolate, I suggest using the candy melts as the consistency of regular melted white chocolate Is very inconsistent. (You can also use a double boiler to melt the chocolate but I still suggest adding the oil) Remove cake pops 1 by 1 from the freezer, dip the tip of each lollipop stick in chocolate and then put the stick 1/3-1/2 way into each cake ball. Then submerge the ball into the chocolate of your choice until fully covered and once it stops dripping, decorate with your choice of toppings over a plate. Stick each covered pop into a styrofoam board (1 in thick, can be purchased at an art supply store). The pops should be placed far enough apart from eachother so they don't touch. Once all are placed, put in the refrigerator overnight. Remove from fridge and you can serve as is or wrap each pop in a plastic Baggie and tie with ribbon. * refrigerate until 30 minutes before serving
